Matty Matheson’s Halifax Donair

Classic East Coast Donair


A Halifax favorite featuring a spiced meatloaf, sweet garlic sauce, and fresh toppings, typically served in a pita.

Ingredients

For the Donair Meat

  • 1 lb. ground beef
  • 1/2 lb. ground lamb
  • 1/2 lb. ground pork
  • 1 tbsp ground coriander
  • 2 tbsp garlic powder
  • 2 tsp ground oregano
  • 2 tsp ground thyme
  • 1 tsp cayenne pepper
  • 1 tbsp ground black pepper
  • 1 tbsp salt

For the Donair Sauce

  • 3/4 cup evaporated milk
  • 2/3 cup granulated sugar
  • 1/4 cup white vinegar
  • 1/4 tsp garlic powder

To Assemble

  • 8 Pita bread
  • 1 white onion, diced
  • 2 tomatoes, diced

Instructions

1. Prepare the Donair Meat

  1. Preheat oven to 375°F. Line a 9″ x 5″ x 2-1/2″ loaf pan with parchment paper.
  2. Place all meat and spice ingredients in a stand mixer fitted with the paddle attachment.
  3. Mix on low for 30 seconds. Gradually increase speed.
  4. Mix on medium-high until the meat mixture is completely even and smooth, about 1 minute.
  5. Firmly pack the meat into the prepared loaf pan. Gently bang the pan against the counter to remove any air pockets.
  6. Create a bain-marie by placing the loaf pan inside a casserole dish halfway filled with water.

2. Bake the Meatloaf

  1. Bake the meatloaf on the middle rack of the oven until the internal temperature reaches 150°F, which should take approximately 1 hour and 20 minutes.
  2. Once cooked, carefully remove the meatloaf from the pan and let it rest for a minimum of 10 minutes before slicing.

3. Make the Donair Sauce

  1. While the meat is baking, prepare the sauce. In a bowl, mix together the evaporated milk and sugar.
  2. Slowly pour in the vinegar while continuously mixing.
  3. Stir in the garlic powder.
  4. Refrigerate the sauce for a minimum of 15 minutes to allow it to thicken.

4. Assemble and Serve

  1. Thinly slice the rested donair meat.
  2. Place a generous amount of sliced donair meat on a pita.
  3. Sprinkle with diced onion and tomato.
  4. Drizzle generously with the chilled donair sauce.
  5. Roll up the pita and enjoy! Repeat with remaining ingredients.
