after watching this dude make taco shells using fried cheese, I had to try it on something. It’s not taco season here, so I thought why not in an egg sandwich?

Shredded medium cheddar in the egg rings, low heat (2.0 on the inducton hob)…
…once crispy (~10 mins), drop the eggs in…
…break the yolks to spread the yolky goodness…
…cover for a few minutes to set the eggs; the bacon is leftrover from last bacon-cooking session, so it’s just getting a re-heat…
…is the cheese crispy? seems so!
Add some cheese on top and melt; seem like too much cheese, but this cheese will be melty not crispy, so it’s different.
Final assembly. There’s mayo or Miracle Whip under the cheese/egg/cheese/bacon layer.
