for some reason i wanted to try a paneer & spinach dish, something like Palak Paneer, but with fresh baby spinach instead of a spinach-based gravy. decided to use Paneer Bhurji instead. for the record, store-bought paneer, not homemade.
wasn’t bad. but need more spice; try 2x of recipe next time? and sadly, the texture of the Paneer Bhurji was very similar to the egg; I was hoping for more contrast. maybe next time try frying the paneer as larger cubes to give a more solid bite?
