We tested multiple ways to store bananas to both speed and slow ripening. Here, we are sharing our results and explaining the science behind them, along with our recommendations for how to best store bananas.

slow ripening by wrapping stems in in plastic, cooler temperature (not fridge!), and separate them.
speed up ripening, warmer temperature, bagging doesn’t do much.
(can you believe the editors at Serious Eats ran those two thoughts into one paragraph); i spent a good 2 minutes hacking that paragraph into 2)
