so len asked how I make taco ground beef from “scratch”, not using a packet mix. so I typed this into our fb messenger chat:
for a 1lb of ground beef, 1tb ground cumin, 1ts chili powder, 1/2ts Tajin. usually fry some chopped onion (1/2 cup?) and 2 or 3 chopped garlic cloves, then in goes the beef. after browned, usually drain some of the fat, add some water and spices, simmer and reduce. all estimated.
then i thought why not make a recipe from this; as a minimum, put it in the blog? so asked Gemini+ to do the formatting; here’s the chat, and here’s the result, c/p’d here:
Taco Ground Beef
- 1 lb ground beef
- 1/2 cup onion, chopped
- 2-3 garlic cloves, minced
- 1 tbsp ground cumin
- 1 tsp chili powder
- 1/2 tsp Tajin seasoning <-- click here for example!

- 1/4 cup water (approximate)
- Reduce: Simmer over low heat until the liquid has reduced and the spices are well-incorporated.
- Sauté Onion: Fry the chopped onion in a large skillet over medium heat for about 2 minutes.
- Add Garlic: Add the minced garlic and cook until fragrant.
- Brown: Add the ground beef to the skillet. Cook until fully browned, breaking it into crumbles as it cooks.
- Drain: Drain the excess fat from the pan if desired; tacos aren’t health food, so let the chef decide on the fat level.
- Simmer: Stir in the cumin, chili powder, and Tajin. Add water and stir to combine.
Note: spices are approximate. I don’t usually measure, just add ’til it look right. Especially with the chili powder; depending on its strength and considering the prefs of the eaters.
