Add the <strong>diced onion<\/strong> and cook until softened and translucent, about 3-5 minutes. Add the <strong>minced garlic<\/strong> and cook for another minute until fragrant.<\/li><li><strong>Toast Rice &amp; Chipotle:<\/strong> Add the <strong>rinsed and drained rice<\/strong> to the pan. Stir frequently for 3-5 minutes, allowing the rice to toast slightly and become lightly golden. This step helps prevent the rice from becoming sticky. Stir in the <strong>minced chipotle peppers<\/strong> (or paste) and cook for another minute, allowing their smoky flavor to develop.<\/li><li><strong>Add Liquids &amp; Spices:<\/strong> Pour in the <strong>tomato sauce<\/strong> and <strong>warm broth<\/strong>. Add the <strong>cumin<\/strong>, <strong>dried oregano<\/strong>, and <strong>salt<\/strong>. Stir everything together gently to combine.<\/li><li><strong>Simmer:<\/strong> Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot tightly with a lid, and simmer for <strong>15-20 minutes<\/strong>, or until the liquid is absorbed and the rice is tender. <em>Resist the urge to lift the lid during this time!<\/em><\/li><li><strong>Rest &amp; Finish:<\/strong> Once the cooking time is up, remove the pot from the heat and let it rest, still covered, for <strong>5-10 minutes<\/strong>. This allows the rice to steam and become fluffy.<\/li><li><strong>Fluff &amp; Season:<\/strong> Uncover the pot. Add the fresh <strong>lime juice<\/strong> and chopped <strong>cilantro<\/strong>. Gently fluff the rice with a fork to incorporate the cilantro and lime.
